Lately I've been asked more and more to cater picnic style food, leaving me inspired to write this blog post. I love wrapping food in greaseproof paper, filling tins with sandwiches made with homemade bread, bran loaf slathered with real butter (of course), herbed chicken drumsticks packed on ice so they are deliciously cool to bite into (even on the hottest day) the best of the summer stone fruits and glass bottles filled with homemade lemonade served in brightly coloured tumblers. Throw in some checkered napkins and a matching cloth and hey presto, an easy, delicious picnic prepared and packed with love.
Here's my famous no knead bread recipe..... to make sandwiches to knock someone's socks off!
No Knead Bread
2.5 cups warm water
1 tsp honey
2 tsp yeast (not surebake)
4 cups wholemeal flour
1 ½ tsp salt
seeds to add - pumpkin, sunflower, linseed (1 large handful)
Mix warm water and honey till dissolved then sprinkle yeast over the top, stand for 5-10 mins
Mix flour and salt, add seeds if using.
Stir yeast mixture into flour, mix well until dough comes away from sides of bowl, add more water if needed
Put dough into greased loaf tin cover with gladwrap and leave to rise in a warm place, about an hour.
Bake in preheated oven 220 for 10 mins then lower to 200 for 50 mins. Knock on the loaf to test, if it sounds hollow it is cooked.
